crocetin dialdehyde synthase EC#: 1.13.11.84; ChemWhat Code: 1375022

Product Name crocetin dialdehyde synthase
Example Structure Example Structure of crocetin dialdehyde synthase EC#: 1.13.11.84
Synonyms beta-carotene 7′,8’oxygenase, carotenoid cleavage dioxygenase 2, CCD2, CCD4.1, CCD4.3, ZCD, zeaxanthin 7, 8 (7, 8)-cleavage dioxygenase, zeaxanthin 7,8(7′,8′)-cleavage dioxygenase, zeaxanthin 7,8-cleavage dioxygenase
EC Number 1.13.11.84
CAS Registry Number
Comments The enzyme, characterized from the plant Crocus sativus (saffron), acts twice, cleaving 3¦Â-hydroxy-¦Â-cyclocitral off each 3-hydroxy end group. It is part of the zeaxanthin degradation pathway in that plant, leading to the different compounds that impart the color, flavor and aroma of the saffron spice. The enzyme can similarly cleave the 7-8 double bond of other carotenoids with a 3-hydroxy-¦Â-carotenoid end group. Formerly EC 1.14.99.42 and EC 1.14.99.n3.
